Tempt My Tummy Tuesdays- Cherry Crunch

This recipe again comes from my mom.:) It has always been one of my dad's favorite desserts; we all loved it, but we had to eat it when we could, or it'd be gone in a flash. The nice thing about this dessert is that you don't even have to use cherries; you could sub in strawberries or blueberries or whatever your taste buds are cravin'. Enjoy!

Cherry Crunch

Crust
1 1/2 sticks margarine
1 1/2 cups flour
1 cup chopped pecans

Melt margarine and stir into flour with a fork; stir in pecans. Press in 12x15 inch baking dish. Bake at 350 degrees for 20 minutes. Let cool.

Filling
2 small pkg. Dream Whip or small Cool Whip
2 cups powdered sugar
1 (8 oz.) cream cheese
2 cans cherry pie filling

Mix Dream Whip according to package directions
(Cool Whip or some other whipped topping if desired). Add 2 cups powdered sugar and 8 ounces cream cheese. Mix well, beating with electric mixer. Pour on crust and top with cherry pie filling (or blueberries, strawberries, etc.).

My grandmother always made this -- it's wonderful! There are too many things I'd have to find substitutes for to make it gluten free, nut free, casein free, soy free, etc etc etc, so it's not one I make anymore.
